2 oz. Journeyman Bilberry Black Hearts Gin

6 fresh raspberries

½ lemon (quartered)

½ oz. simple syrup

3 oz. sparkling water or wine

Lemon, for garnish 

Muddle and shake all ingredients except the sparkling water well with ice and double-strain into an ice-filled wine glass.  Top with the sparkling and garnish with the lemon.
